How can I give her a special yet inexpensive Christmas?

My fiancee and I will be spending Christmas together for the time, just the two of us in the house that we are renting for the winter. We have electricity, water, a stove, hot tub, television and very little money. What can I do for her that is inexpensive, but is something that she'll remember forever?
